Sausage and Tortellini Soup

Ingredients

  • mild Italian sausage
  • onion
  • celery
  • carrot
  • salt
  • black pepper
  • fresh oregano
  • chicken stock
  • tomato sauce
  • fresh parsley
  • cheese tortellini
  • water

Steps

  1. Heat a pan over medium heat, add mild Italian sausage, crumble with a tool, and cook until browned.
  2. Add onion, celery, and carrot; season with salt and black pepper; stir in fresh oregano.
  3. Pour in chicken stock and add a little tomato sauce; stir and simmer for about 20 minutes.
  4. In a separate pot, bring water to a boil and cook cheese tortellini for about 3 minutes; drain and cool until serving.
  5. Finish the soup with chopped fresh parsley and give it a brief simmer.
  6. To serve, place tortellini in a bowl and ladle the hot soup over to heat the pasta through.
