Steps
- Heat a pan over medium heat, add mild Italian sausage, crumble with a tool, and cook until browned.
- Add onion, celery, and carrot; season with salt and black pepper; stir in fresh oregano.
- Pour in chicken stock and add a little tomato sauce; stir and simmer for about 20 minutes.
- In a separate pot, bring water to a boil and cook cheese tortellini for about 3 minutes; drain and cool until serving.
- Finish the soup with chopped fresh parsley and give it a brief simmer.
- To serve, place tortellini in a bowl and ladle the hot soup over to heat the pasta through.
