Bacon Beef Three-Bean Chili

  • bacon, 12 oz
  • ground beef, 3 lb
  • white onions, 2, diced
  • red bell pepper, 1, diced
  • green bell pepper, 1, diced
  • jalapeƱos, 2, minced
  • tomato paste, 2 tbsp
  • garlic, 5 cloves, minced
  • chili powder, 3 tbsp
  • ground cumin, 1.5 tbsp
  • paprika, 2 tsp
  • dried oregano, 2 tsp
  • cayenne pepper, 1 tsp
  • kosher salt, to taste
  • black pepper, to taste
  • beef broth, 32 oz
  • pinto chili beans, 1 can (15 oz)
  • kidney chili beans, 1 can (15 oz)
  • black chili beans, 1 can (15 oz)
  • diced tomatoes (canned), 3 cans (14.5 oz each)
  • sour cream, for serving
  • cheddar cheese, for serving

Steps

  1. Heat a large pot over medium heat. Add {{bacon:12 oz}} and cook, stirring, until crisp, about 12 minutes. Transfer bacon to a plate and pour off most of the rendered fat, leaving about 1-2 tbsp in the pot; reserve the rest.
  2. Add {{ground beef:3 lb}} to the pot. Break it up and brown until no longer pink and lightly browned, 8-10 minutes. Transfer beef to a bowl; leave a thin coating of fat in the pot.
  3. If the pot looks dry, add back 1-2 tbsp reserved bacon fat. Add {{white onions:2, diced}}, {{red bell pepper:1, diced}}, {{green bell pepper:1, diced}}, and {{jalapeƱos:2, minced}}. Cook, stirring, until softened, 5-7 minutes, then stir in {{tomato paste:2 tbsp}} and cook 1-2 minutes.
  4. Add {{garlic:5 cloves, minced}} and cook until fragrant, about 1 minute.
  5. Stir in {{chili powder:3 tbsp}}, {{ground cumin:1.5 tbsp}}, {{paprika:2 tsp}}, {{dried oregano:2 tsp}}, {{cayenne pepper:1 tsp}}, {{kosher salt:big pinch}}, and {{black pepper:big pinch}}. Toast the spices, stirring, 2-3 minutes.
  6. Pour in {{beef broth:32 oz}} and bring to a simmer, scraping up any browned bits from the bottom.
  7. Return {{ground beef:3 lb}} and {{bacon:12 oz}} to the pot and stir to combine.
  8. Add {{pinto chili beans:1 can (15 oz)}}, {{kidney chili beans:1 can (15 oz)}}, {{black chili beans:1 can (15 oz)}}, and {{diced tomatoes (canned):3 cans (14.5 oz each)}}. Stir well.
  9. Cover and simmer gently for about 2 hours, stirring occasionally. Taste and adjust with {{kosher salt:to taste}} and {{black pepper:to taste}}.
  10. Serve hot topped with {{sour cream:to taste}} and {{cheddar cheese:to taste}}.
