One-Pot Beef and Rice

Ingredients

  • ground beef: 1 lb
  • salt: to taste
  • black pepper: to taste
  • garlic powder: 1/2 tsp (optional)
  • yellow onion: 1, diced
  • green bell pepper: 1, diced
  • whole kernel corn: 1 (15 oz) can, drained
  • black beans: 1 (15 oz) can, drained and rinsed
  • petite diced tomatoes: 1 (14.5 oz) can, undrained
  • taco seasoning mix: 1 packet
  • beef stock or broth: 2 cups
  • long-grain white rice: 1 cup
  • sour cream: for serving (optional)
  • fresh cilantro: for serving (optional)

Steps

  1. In a large pot over medium-high heat, brown {{ground beef:1 lb}} while seasoning with {{salt:to taste}}, {{black pepper:to taste}}, and {{garlic powder:1/2 tsp (optional)}}.
  2. Add {{yellow onion:1, diced}} and {{green bell pepper:1, diced}}; cook 3–5 minutes until slightly softened.

  5. Remove from heat and let stand, covered, for 5 minutes; fluff and mix before serving.
