Crispy Asian Meatloaf with Sesame Slaw and Ginger-Glazed Carrots

Steps

  1. Preheat the oven to 375°F and line a sheet pan.
  2. Combine {{Ground beef:1 part}} and {{Ground pork:1 part}} in a large bowl. Add {{Eggs:2}}, {{Ginger, pureed:a spoonful}}, {{Garlic, pureed:a spoonful}}, {{Soy sauce:a splash}}, {{Hoisin sauce:a spoonful}}, {{Sriracha:a little}}, {{Sesame oil:a splash}}, {{Panko breadcrumbs:a handful}}, {{Kosher salt:to taste}}, and {{Black pepper:to taste}}. Mix until evenly incorporated.
  3. Transfer the mixture to the sheet pan and form it into a compact loaf.
  4. In a small bowl, thin {{Hoisin sauce:enough to glaze}} with {{Rice vinegar:a splash}} to make a glaze. Brush the glaze all over the loaf.
  5. Bake at 375°F for about 60 minutes, until cooked through.
  6. While the loaf bakes, thinly slice {{Napa cabbage:shredded}} and place in a large bowl.
  7. Whisk together {{Dijon mustard:a spoonful}}, {{Ginger, pureed:a little}}, {{Garlic, minced:a little}}, {{Sesame oil:a splash}}, {{Rice wine vinegar:a splash}}, {{Kosher salt:a pinch}}, {{Black pepper:a pinch}}, {{Soy sauce:a splash}}, and {{Sriracha:a little}}. While whisking, drizzle in {{Avocado oil:enough to emulsify}} to make a sesame vinaigrette.
  8. Pour the dressing over {{Napa cabbage:shredded}} and toss to coat. Chill the slaw in the fridge for about 60 minutes.
  9. Bring {{Water:as needed}} to a boil with {{Kosher salt:a big pinch}}. Add {{Carrots:sliced}} and blanch for about 5 minutes; drain well.
  10. Melt {{Butter:1–2 tbsp}} in a skillet, add {{Ginger, sliced:a few slices}} and cook until fragrant. Add the drained {{Carrots:blanched}} and sauté until tender and glazed; finish with {{Kosher salt:to taste}}.
  11. Slice the baked meatloaf and sear slices on a hot griddle or skillet on both sides until crispy.
  12. Serve the crispy meatloaf with the ginger-glazed {{Carrots:to serve}} and top each slice with some sesame {{Napa cabbage:slaw}}.
